Carey-Ann posted this recipe a few weeks back saying she came across this recipe 10 years ago & it's the best carrot cake she has ever had.
Cake making is not my forte but I thought I would give this a try. I didn't add either the walnuts or the coconut first time around. I don't have enough cake pans to try the tier cake so I just made the large one.
I have to say I was very impressed. The pineapple adds a really nice flavour and the cake was light and moist.
Ingredients:
2 cups sifted flour
2 tsp baking powder
2 tsp baking soda
1 tsp salt
2 tsp cinnamon
2 cups sugar
1 1/2 cups oil (sunflower oil)
4 eggs
2 cups grated carrots
1 cup crushed pineapple, drained
1/2 cup walnuts
1 cup coconut (optional)
Cream Cheese Icing:
1/2 cup (112 gms) butter
8oz (225 gms ) cream cheese
1 tsp vanilla
1 lb (450 gms) icing sugar
Directions:
Preheat Oven to 180°C (350°F)
Sift first 5 ingredients. Add sugar, oil and eggs and mix well. Blend in the rest of the cake ingredients.
Grease and flour cake pans.
Makes either - a 3 layer cake, bake for approx 35 minutes.
- or 1 large 13x9 inch cake tin, bake for approx 45 minutes.
Icing: Combine ingredients; mix well. Makes enough for a 3 layer cake. For large cake, cut icing ingredients in half.
I adore baking, even if I rarely eat what I bake:) Not a fan of cakes in general, but I do like carrot cake. I may have to give this a try!

BBQ'd Pineapple.
ReplyDeleteTake as much sliced pineapple as needed.
Slap it on a hot BBQ for about 4 minutes.
Turn it over, cook for a further 4 minutes or until sort of black and golden striped.
Put it on a plate.
Eat it.

Omg tyvm Ang, for posting one of my all time fav deserts, and there arent many I can tell ya, I sooooo love Carrot cake, only thing I would do with this is leave the walnuts out lol.
ReplyDeleteIs pineapple truly good grilled on a grill? I've never had pineapple any way other then chilled or on a pineapple upside down cake. I LOVE pineapple!

ReplyDeleteYes Leslie. It's awesome. You can also put it on a burger, with cheese melted over the top. Or you can grill some hame steaks, with pineapple. Put the pineapple on top of the ham steaks and melt some cheese over them. A taste sensation.
I didnt think about the pineapple on a ham. We do that for thanksgiving and xmas, but no cheese. I'll have to try to grill some pineapple and see what it taste like. Do you use any seasonings or jus the pineapple by its self?

ReplyDeleteWell, I suppose it COULD be made without the pineapple, but thats a cup of "moisture" lost. I'll have to think of a replacement.
ReplyDeletei was trying to think of an item to supplement but since i dont like carrot cake to begin with and i love pineapple I cant think of any other way to substitute than with pineapple.

ReplyDeletewell you do drain the pineapple so perhaps you could substitute with sultana's or dried apricots.
