Description:
This is an incredibly easy way to cook potatoes that are guaranteed to be crispy on the outside and cooked to perfection on the inside.

Ingredients:
12-16 baby chat potatoes
generous pinch of salt
1 tablespoon olive oil
Directions:
Preheat oven 200°C/180°C fan forced
Cook potatoes in a saucepan of boiling salted water until tender, but not mushy. Drain. Smash each potato gently, so that the skin splits and the potato is slightly squashed. Place onto a baking tray and drizzle over 1 tablespoon of olive oil and a generous pinch of salt. Roast in preheated oven for 25-30 minutes or until golden and crispy.
(I usually turn these once half way through & if serving with lamb I'll usually throw on a sprig or 2 of rosemary)
Sounds yummy. After actually attempting to cook this holiday season, I am feeling an urge to spend more time in the kitchen and less time on the phone ordering food in.

they are a coliban potato, but baby or new potatoes are fine, I don't know if you have coliban variety there
ReplyDeleteIts a potato that talks a lot. The only way to stop it talking is to place in boiling water for a short period of time lmao
ReplyDeleteThey look delicious Angie. I make mine in the oven sometimes too but i just peel them wash, then cut them into 4 wedges, then on a baking sheet spread them toss with a little oil ,add salt , black pepper, and paprika then bake in the oven on about 375 degrees until done can turn once.

ReplyDeleteI agree Hannah they are yummy done this way, I used to just throw them in the roasting pan with the joint of meat, but I prefer them done this way.
