1-2 small tomatoes
1-2 red chillies, finely chopped
1 small red onion, finely chopped
1 tablesp chopped fresh coriander
1 tablesp freshly squeezed lime juice
1/4 cup sour cream
1-2 drops of habanero or tabasco sauce
Cut the avo in half, discarding the skin & the stone. Roughly chop & then mash lightly with a fork.
Cut the tomatoes in half , scoop out the seeds & discard. Finely dice the remaining tomato flesh. Combine all ingredients & mix until you reach your desired consistentcy, I like mine to be quite chunky. Season with cracked pepper, lightly chill before serving.
(serves 4-6 people)
Mmmmm I love guacamole!!! I will eat it on almost anything. I especially like it on turkey & bacon sandwiches with sliced red onion and sunflower seeds!!!!! I know sounds weird but give it a try....you'll love it.....LOL

ReplyDeleteoh my gosh i absolutely adore avacado anything. And that sounds fabulous! I'll hav to try it. depending on the price I usually have avacado on hand as a staple in my house.
ReplyDeleteIt's hard to get good avocados here. Usually they are hard as rocks, and by the time they get soft they are rotten.......go figure. Costco used to carry the frozen, which was delicious, but they haven't had it for a long time.
ReplyDeleteI do have a tip for those rock hard avacados that's worth a try.
ReplyDeleteStore 2 or 3 in a brown paper bag (or even newspaper works) at room temperature. add an apple or a tomato to the bag.
