Apple Cinnamon Cake


Description:
(For Jenna) Sorry it took me a couple of days to drag this recipe out.

I serve this warm as a dessert with plenty of whipped cream, but it is also quite nice eaten cold as a slice of cake.

Sometimes I use a different fruit, like peaches, raspberries or fresh cherries.

Ingredients:
- 150 grams of butter, melted
- 2 cups, approx, of well drained, lightly stewed apples, or a med can of apple pie filling.
- 1/2 cup sugar
-2 eggs
-2 cups of self raising flour
-2 teaspoons ground cinnamon
-icing sugar to dust

You can also add:
- 1/2 cup sultanas
- 1/2 cup chopped walnuts

Directions:
Mix all ingredients together and spoon into a well greased 20-23cm paper-lined springform pan.

Fan bake @ 160°c ( 320°f ) for 40-45 mins, or until golden & well cooked in the middle. Cool on a cake rack before serving. Lightly dust with icing sugar.

  1. This sounds really easy, or am I just misreading it? Do you really just throw all the ingredients together & then into the pan? No beating or creaming or other weird cooking things? lol

    Yeah no beating or creaming or weird stuff. I just sift the dry ingredients & add everything else & stir to combine....

    but,
    a) i wish i had grown up using the metric system
    b) what the hell are sultanas?
    c) i need to purchase a springform pan. I lost my last one in the parental divorce.

  16. It's just called baking paper here....it's definitely not waxed. I don't always bother lining the bottom of the tin, my springform pans are non stick so I usually can get away with just lightly greasing them.

  19. I've been baking everything lately, cookies, brownies, this looks really good altho I'm torn should I try this one or the pineapple cheesecake first...hmm I'll have to flip a coin.

  25. Yeah it's the one that I keep coming back to, I usually always have the ingredients on hand to make this. I love apple pie but my pastry skills aren't the flashest.

    I might make one tonight, only because Mark sucked up asked so politely lol

  35. I had to think a minute to work out what you meant....doily also spelt doilie lol

    About the only time I've done that is at xmas time & I've used a stencil of a xmas tree as well, it makes a nice effect.
