I always like to try a new recipe for dessert on Christmas Day. Gave this one a test run last night, not only was it dead easy it tasted fabulous as well.
This recipe uses Chocolate Ripple biscuits made by an Australian Company - Arnotts.
I don't know if you can get them where you are, but you may be able to find a similar substitute.
Ingredients:
300ml cream
1 tsp caster sugar
1 tsp vanilla extract or essence
1 x 250g packet Arnott’s Choc Ripple Biscuits
grated chocolate, cocoa powder (I just crumble a flake chocolate bar)
raspberries or seasonal berries to decorate
Directions:
# In a bowl add cream, sugar and a drop of vanilla essence and whip until stiff.
# Join biscuits together by standing a biscuit on its side and sandwich with the next biscuit using a generous spread of cream. Continue until all the biscuits have been used and resembles a log.
# Cover the log thickly, and entirely, with the remaining cream. Place in refrigerator for at least 6 hours, or overnight to set.
# Before serving, decorate log with grated chocolate, if desired. To serve, cut cake at a slight angle to ensure alternate layers of chocolate biscuit and cream are in each slice. Garnish with grated chocolate, or sprinkle with cocoa powder, and serve with raspberries, if desired.
To add some tempting twists to the cake:
# Brush the biscuits with your favourite liqueur, or strong coffee, before sandwiching together.
# Stir in finely grated dark chocolate into the whipped cream before sandwiching together.
# Decorate the cake with chocolate curls.
# Replace vanilla with 1 tsp of espresso or strong coffee. Replace rasperries with sliced banana.
# Replace vanilla with your favourite liqueur such as hazelnut or citrus liqueur.
This dessert is just the best dessert on the planet. I loved it so much I even had it for breakfast this morning lol. I would love to try it with dark chocolate in the whipped cream as well.

ReplyDeleteI've never heard of the biscuits before, and i dont think they ahve them here. Can you describe the biscuits so i can find a replacement? If i can find somthing, i'll totally give it a shot. Personally, i'm seeing rasberries and milk chocolate.
ReplyDeleteAre the cookies soft? crunchy? just chocolate or is there another flavor to them?
They are a plain chocolate biscuit (not chocolate coated) and crunchy.
ReplyDeleteCovered in the cream & refrigerating them does soften them up.
And yes I had this last night with raspberries and a dollop of vanilla icecream, which was really nice. But it's fresh cherries season here hence my choice for christmas day.
im going to have to think about this. Right now i'm not thinking very well, mostly due to the red wine i must have mistakenly consumed too much of.

my wife makes this, but she uses a different type of biscuit (which we call a cookie). My kids love it. My wife has infused a hint of mint to hers which has really improved it. In fact my son-in-law asked for this instead of his birthday cake.

ReplyDeleteThis looks really good! I was searching out the Arnott’s Choc Ripple Biscuits and found a site that delivers to the US. It even has the Vegemite Ive been wanting to try. And those Tim Tam chewy caramels looks yummy.

ReplyDeleteIn some cases the price was double. At Coles a 200g packet of Tim Tams cost $3.15 while on the http://www.downunderoz.com/ website the same item cost $6.10. Its a rip off!! We'll get it for ya if ya want something.

You know how much to send American wise unless you want me to get it changed first :-) Its really sad when I think about it I havent a clue where to go to even get the money changed over!
